Papas Con Chorizo Y Rajas Burrito (Mexican Potatoes and Sausage)

My boyfriend and I, we love potatoes. And one of our favourite Mexican quick meals is Papas Con Chorizo Y Rajas Burrito. So delicious and so easy to make.

Chorizo is basically spicy pork sausage. Which can be bought from the non-halal sections at Isetan and Village Grocers. I am not a fan of pork but a few slices of Chorizo really adds flavour to a plain dish. I usually like thinly sliced chorizo with potato, fried noodles and omelette. To me, chorizo is basically like Chinese sausage called ‘lap chiong’.

So let’s begin!

Ingredients: Olive oil 2 medium potatoes. Half medium onion, thinly sliced 1 jalapeño, thinly sliced 1 avocado Chorizo, thinly sliced (as much as you like) Tortillas wrap

Cooking direction: Step 1: Peel and cut the potatoes into cubes and boil them until they are soften. Once it’s soften, remove the excess water with a strainer and leave it aside to cool.

Step 2: Fry the thinly sliced chorizo, onions and jalapeño until the onion is caramelised.

Step 3: Fry the potato together with the chorizo, onions and jalapeño. Add salt and pepper to taste.

Step 4. Wrap the fried potato, chorizo, onions, jalapeño, and avocado slices with the tortillas wrap. And heat it up in the pan until it’s crisp and golden brown.

And viola! It’s done. Happy eating!
